Poached Atlantic Salmon with Hollandaise Sauce
Ingredient:
1 cup white wine
2 cups fish stock
1 tablespoon lemon juice
1 large slice onion
4 Atlantic salmon cutlets, 2.5 cm thick fresh dill, to garnish

3 egg yolks
125 g butter, melted and hot
1/2 teaspoon grated lemon rind
1 tablespoon lemon juice
